Rustic Roasted Vegetables:

This is a Nutrient Packed Side Dish that will add zest to any meal Meat or Dairy!



Recipe Ingredients:

  • 4 large red onions, peeled and quartered
  • 2 Tbsp. Olive oil + extra for drizzling
  • 1 Can chickpeas, drained
  • 1 package precut butternut squash (or 1 medium butternut squash, peeled and cut into large chucks
  • 3 large sweet potatoes, peeled and sliced into thirds
  • 1/4 cup sugar
  • 2 tsp. cinnamon
  • 1/3 apple juice

 

Preheat oven to 400 degrees F.  In extra-large pan, sauté onions in oil unit golden brown.  Add chickpeas. Cover with remaining vegetables. 

Combine sugar and cinnamon and sprinkle over vegetables; drizzle oil over the top. Add apple juice.  place in large oven-to-table casserole dish and bake uncovered for about 45 minutes, until vegetables are soft and well browned. 

For an added dash of color before serving, scatter finely chopped chives on top. 

Serve this dish on the same day you prepare it; the onions will discolor quite quickly.
