This is another great Fish Recipe for the Nine Days which are fast approaching. It adds a little bit of the tropics and a touch of sweetness to a very healthy dish.
Recipe Ingredients:

3 Tbsp. Frozen orange juice concentrate, thawed

Tbsp. Olive Oil

1/4 cup honey

1/3 cup soy sauce

2 scallions, thinly sliced

1 Tbsp. finely minced fresh gingerroot

4 6-oz pieces of salmon, filleted, skin removed

Package Carrots, cut into sticks
-
Chives, snipped into small pieces

Directions:
Combine first six Ingredients and pour over fish in glass baking dish.
Cover and chill at least 1 hour
Remove salmon, reserving marinade. Grill or broil 4 inches from heat source, turning once and brushing several times with marinade. Cook until fish is thoroughly done and flakes easily when tested with fork, about 20-25 minutes. Discard remaining marinade.
While fish is cooking, toses carrot sticks with olive oil and place in small baking pan. During 3-5 minutes of cooking, place carrots in oven. Before serving, scatter carrots over salmon and sprinkle with chives. |
