A Nice, Light Summer Recipe that is easy to prepare in about 10-15 minutes.
Ingredients:

- 4 boneless chicken breast, pounded to desired thinness
- Olive oil
- Salt and pepper to taste
- 1/4 cup fresh broth or Imagine Organic No-Chicken Broth
- 1/2 cup rice milk
- 16 oz. sliced mushrooms
- 2 Tbsp. Dijon Mustard
- 1 tsp. chopped fresh tarragon (+ whole sprigs for garnish)
- 1 tsp cornstarch
