Make a few of these potato latkes and they'll be hoisting you up on a chair in no time! Yes, maybe in protest of wanting more, but the point is - they'll love them!
The best part about making these potato latkes is that it's quick, simple and super-delicious!
Peel, grate and drain enough potatoes to measure 6 cups. Add remaining ingredients and mix well. Fry by dropping from a soup spoon into a hot skillet with oil, enough to "sizzle" well. Fry until golden brown and turn. Drain excess grease. Serve warm with applesauce and sour cream. Latkes may be made ahead, frozen and reheated in a hot oven to serve. Recipe serves 6.
